The University of Gastronomic Sciences of Pollenzo, founded and promoted in 2004 by the international Slow Food association with the collaboration of the Piedmont and Emilia Romagna regions, is a non-state university legally recognized by the Italian state.
The university trains gastronomes, new professionals who have interdisciplinary knowledge and skills in the sciences, culture, politics, economics and ecology of food and are able to develop values such as sustainability and the sovereignty of global food systems, including all stages, from production to consumption.
The University has various laboratories among its facilities, including a Sensory Analysis Laboratory and a recently opened Sustainability Laboratory – Circular Economy.
It collaborates with over 150 organizations and companies that make up the UNISG Network, privileged interlocutors with whom the University develops research, training and innovation projects.
